I sat down with two of the most influential winemakers in our region: Eric Jensen of Booker Wines and Stephan Asseo of L’Aventure Winery. Stephan left Bordeaux to escape the rules. Eric? He never followed them to begin with. Together, they’ve shaped not just vineyards, but a movement, redefining what’s possible in Paso and proving you don’t need permission to make great wine, just vision.
