Chef Don Paleno, a chef of over 20 years, is the Owner/Operator of DJ’s Pickles. DJ’s Pickles is a local pickle company out of Asheville, NC, and the WNC Farmers Market. Chef Don prepares, brines, and packages small-batch pickled products like the Silly Dilly, En Fuego, and Serious Dill cucumber chips, Basil & Balsamic Beets, Sweet & Spicy Okra, Dilly Beans, and more. Chef Don is a native of Massachusetts but grew up in Madison County. Chef Don is the ultimate “silly dilly” and is a family man, who loves lake days, rock music, and an opportunity to get out the roller skates. He has championed the local American Culinary Federation (ACF) chapter, worked as an Executive Chef to help build and grow a number of local restaurants, ran his own food truck “Chef Don’s Gourmet Snack Wagon” and makes a mean award-winning chili.
