We both recommend doing your own research to find long life shelf stable foods that for your own lifestyle which you can incorporate into your food supply when expiry dates run short. (Or alternatively donate a few months before it goes off.)
My wife enjoys watching numerous reputable YouTube channels to learn more about food prepping.
She also says, "if something is on sale, buy three. One to eat this month, and two to store". We both tend to focus on buying items which will expire more than 1-year in advance.
Lastly, she mentioned that it's important to incorporate two types of foods for long term storage. Those which you would heat and eat, and the types which can be eaten without any heating required...
