Natural Wines - what's the difference?

What are the differences between conventional, organic, bio dynamic, natural, low intervention wines?  

With so much choice and often overwhelm when hearing all these words, does it really make a difference to choose one over the other and why? What about sulfites? What exactly are they and are they bad news or should we embrace them?
