Enchanting Stories of New Mexico - New Mexico Chile is many things

I was talking with some visitors to our area of Southern New Mexico the other day. One person asked, Is Green Chile a food, a condiment, a spice, a trade good or a medicine? I answered, Yes to all and more. First off it is a food and it is spreading across the taste buds of America. Years and years ago not that many people had the good Chile Pepper smile after a meal. Then people would bring some back to their home states and their friends would enjoy the taste. So the Chile Peppers in New Mexico are spicy enough to be a seasoning on their own or they can be a food such as Chile Rellenos which is a cheese stuffed Chile Pepper, usually a Big Jim variety since Big Jim was at one time the World’s largest Chile Pepper according to the Guiness Book of World Records. Oh, and Big Jim isn’t just for show, it has a great taste that keeps people coming back for more.
