Healthy Pumpkin Cookies | Guilt-Free Fall Treat!
Ingredients
- 2 ½ cups of pumpkin puree (fresh or canned; fresh is preferred for natural flavor)
- ¼ cup maple syrup
- 1 cup oats
- Optional: 1 cup mini chocolate chips (adjust amount to your preference)
Instructions
- Prepare the Pumpkin: If using fresh pumpkin, cook and puree it first. You can also use canned pumpkin if preferred.
- Mix the Ingredients: In a bowl, combine the pumpkin puree, maple syrup, and oats. If using, add the chocolate chips and mix well.
- Form the Cookies: Roll the mixture into balls and place them on a cookie sheet. Flatten each ball slightly before baking.
- Bake: Preheat the oven to 350°F (175°C). Bake for 10-12 minutes. If using fresh pumpkin, which is more moist, you may need to bake for a little longer until the cookies are golden brown.
- Cooling: Let the cookies cool before enjoying.
