016 - Specialty Coffee

The evolution of coffee has been coming at us in waves. In a simple sense, the three waves of coffee represent how accessible or appreciated coffee has been at certain points in time. The first wave represents the shift from novelty to commodity, the second wave represents the shift from commodity to culture, and the third wave represents the shift from culture to consumer awareness.
