Welcome back to Broke & Hungry – where we turn low-budget meals into high-flavor feasts! Today, we're making Poor Man’s One-Pan Cheesy Rice – a creamy, buttery, and cheesy dish that comes together in one pan using pantry staples. Perfect for when the fridge is looking empty, and payday is still a few days away. Let’s make the ultimate budget-friendly comfort meal!
Ingredients:
- 1 cup white or brown rice (uncooked)
- 2 cups water or broth
- 2 tbsp butter
- 3 cloves garlic, minced (or 1 tsp garlic powder)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp onion powder (optional)
- 1/2 tsp Italian seasoning (optional)
- 1/2 cup shredded cheese (cheddar, mozzarella, or parmesan)
- 1 tbsp chopped parsley (optional, for garnish)
Instructions:
- Melt butter in a large pan over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Stir in rice, coating it in the butter and garlic.
- Pour in water or broth, add salt, black pepper, onion powder, and Italian seasoning (if using). Stir well.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is tender.
- Remove from heat, let it sit covered for 5 minutes, then fluff with a fork.
- Stir in shredded cheese, mixing until melted and creamy.
- Garnish with parsley (optional) and serve hot!
Budget-Friendly Tips:
- Use broth instead of water – Adds extra flavor!
- Swap cheese – Parmesan, cheddar, or whatever you have works.
- Add protein – Stir in cooked chicken, beans, or ground beef for a heartier meal.
- Make it spicy – Add red pepper flakes for a kick!
Serving Ideas:
- Serve as a standalone dish for a quick meal.
- Pair with grilled veggies, fried eggs, or roasted chicken for a full meal.
- Use as a filling for burritos or stuffed peppers for a creative twist.
