🥞 Struggle Pancakes Recipe (Serves 2-3)

📝 Ingredients:

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup water (or milk if you have it)
  • 1 tbsp oil or melted butter
  • 1/2 tsp vanilla extract (optional, but makes them taste better)

Egg Replacement (Pick One if You Want Extra Fluffiness):

  • 1 tbsp mayo (yes, really—makes ‘em rich!)
  • 1 tbsp applesauce
  • 1/2 mashed banana

🔥 Instructions:

1️⃣ Mix Dry Ingredients – In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

2️⃣ Add Wet Ingredients – Pour in water (or milk), oil, and vanilla. Stir until just combined. If using an egg replacement, mix it in now.

3️⃣ Heat the Pan – Use a non-stick skillet over medium heat. Lightly grease with butter or oil.

4️⃣ Cook the Pancakes – Pour 1/4 cup of batter per pancake into the pan. Let it cook for 1-2 minutes until bubbles form on the surface. Flip and cook another 30 seconds to 1 minute until golden brown.
