Controlling Chaos — Chef Alex Valle (Brooklyn-born, of Mexican parents) pulls back the curtain on life in NYC kitchens. Fueled by a love of cooking, Alex went from a rebellious youth to disciplined professional, training with top chef Ignacio Mattos and opening several restaurants across New York City. In this episode he confronts the real pressures behind the service industry: long hours, staffing creativity, poor work–life balance, harsh kitchen environments, career barriers, and language/cultural challenges. 
Alex shares how dedication, resilience, and leadership helped him rise through kitchens and why his story represents the broader NYC hospitality scene.
He is currently the Executive Chef at Revival, located in the Lower East Side in NYC.
