Sausage & Peppers Sandwich
Take 1 pound of fresh mild Italian Sausage
1 Green Bell Pepper and 1 Red Bell Pepper, seeded and chopped about 1½” square
1 Yellow Onion, chopped the same way
Use a bit of oil to begin the cooking. On a grill or in a large heavy skillet, cook the sausage over medium-low heat. Cover it and when the sausage has let some of its fat out, push it to the side and fry the peppers and onions, letting them cook with the sausage fat from cooking. This gets the sausage flavor through the vegetables. Keep cooking all of the things low and slow, but don’t let any of them burn. When the sausage is done through, but not too done, check to see that the peppers and onions are thoroughly cooked, soft with no crunch. Then serve one sausage with added vegetables on a roll or bun with yellow mustard.
