A mysterious superfood that none of us had heard of a few years ago! On todayโs episode Simon explains the origins of this edible seed and I will explain why itโs SO good if youโre vegan or vegetarian. We also recommend cooking a cupful according to the packet instructions, then making a salad by adding it to some massaged kale leaves, tossing through any leftover chunks of roasted potato you might have lying about, adding smoked almonds or toasted pepitas, and some fetta cheese!
