Tomato soup for jafflesÂ
1 tin good quality plum tomatoesÂ
1 onion, cut into wedgesÂ
4 tablespoons butterÂ
11/2 cups water, chicken or vegetable stockÂ

Melt the butter over medium heat in a casserole dish or large saucepan.Â
Add onion wedges, water or stock, can of tomatoes with their juices, and 1/2 teaspoon of salt. Bring to a simmer. Cook, uncovered, for about 40 minutes. Stir occasionally and add additional salt as needed. Blend the soup, and then season to taste.Â
