Ingredients Ā
2 finely chopped carrotsĀ
2 x capsicum, de-seeded and dicedĀ
1 onion, finely choppedĀ
garlic clove x 1Ā
1 tsp sweet paprikaĀ
1 tbs of - - THE MYSTERY INGREDIENT: Mexican spice mix!! (Whuuut?? Does this exist. Answer: yup.)Ā
1 finely chopped sweet potatoĀ
1 tin chopped tomatoesĀ
2 tins drained and rinsed black beansĀ
1 stock cubeĀ

MethodĀ
SautĆ© onion, carrots, and capsicum. Add garlic, paprika and Mexican spice mix and cook for two minutes, stirring. Add in tomatoes, beans, sweet potato and capsicum and cook for 15 - 20 mins. Finish with a tablespoon of butterĀ Ā
Optional, to serve: Coriander, sour cream, Greek "yoghurt", guacamole.Ā
